- Mix chopped pecans, graham cracker crumbs, and powdered sugar in a large bowl.
- Add corn syrup, bourbon (if using), and vanilla. Stir until well combined.
- Scoop mixture and roll into 1-inch balls.
- Place granulated sugar in a shallow dish. Roll each ball in sugar to coat.
- Arrange coated balls on a parchment-lined baking sheet.
- Chill in the refrigerator for at least 1 hour before serving.
