Equipment

  • Large salad bowl
  • Cutting board and knife
  • Whisk or small bowl (for dressing)

Ingredients
  

  • 1 large cucumber halved and sliced
  • 4 ripe tomatoes diced
  • 1/2 red onion thinly sliced
  • 1/4 cup Kalamata olives pitted and halved (optional)
  • 2 tbsp fresh parsley or mint chopped
  • For the Dressing
  • 3 tbsp extra virgin olive oil
  • 2 tbsp lemon juice
  • 1 tbsp red wine vinegar
  • Salt and pepper to taste

Instructions
 

  • Wash and slice the cucumber, tomatoes, and red onion.
  • In a large bowl, combine the cucumber, tomatoes, red onion, and olives (if using).
  • In a small bowl, whisk together olive oil, lemon juice, red wine vinegar, salt, and pepper.
  • Drizzle the dressing over the salad and toss gently.
  • Garnish with fresh herbs and serve immediately.
