Mediterranean Salad with Cucumber, Tomato, and Onion Recipe

Ingredients
  

  • 1 large cucumber halved and sliced
  • 4 ripe tomatoes diced
  • 1/2 red onion thinly sliced
  • 1/4 cup Kalamata olives pitted and halved (optional)
  • 2 tbsp fresh parsley or mint chopped
  • For the Dressing
  • 3 tbsp extra virgin olive oil
  • 2 tbsp lemon juice
  • 1 tbsp red wine vinegar
  • Salt and pepper to taste

Equipment

Method
 

  1. Wash and slice the cucumber, tomatoes, and red onion.
  2. In a large bowl, combine the cucumber, tomatoes, red onion, and olives (if using).
  3. In a small bowl, whisk together olive oil, lemon juice, red wine vinegar, salt, and pepper.
  4. Drizzle the dressing over the salad and toss gently.
  5. Garnish with fresh herbs and serve immediately.
