Ingredients
  

  • 4 cups mixed greens spinach, kale, arugula
  • 1 cucumber sliced
  • 1 avocado diced
  • 1/2 cup cherry tomatoes halved
  • 1/4 cup pumpkin seeds
  • 1/4 cup sliced almonds
  • 1/4 cup fresh herbs basil, cilantro, or parsley
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Method
 

  1. Wash and dry all greens and vegetables.
  2. In a large bowl, combine mixed greens, cucumber, and tomatoes.
  3. Add diced avocado, pumpkin seeds, and almonds.
  4. Sprinkle fresh herbs over the salad.
  5. Drizzle olive oil and lemon juice on top.
  6. Season with salt and pepper.
  7. Toss gently to combine all ingredients.
