Garden Salad: A Fresh Summer Recipe
This simple, nutrient-packed salad combines a variety of greens, herbs, and vegetables for a deliciously fresh and crisp bite.
- 4 cups mixed greens baby spinach, arugula, kale
- 1 cucumber thinly sliced
- 1 green bell pepper diced
- 1 green apple thinly sliced
- 1 avocado diced
- 1/4 cup pumpkin seeds
- 1/4 cup fresh herbs basil, parsley, or cilantro
- For the Lemon Herb Dressing
- 1/4 cup olive oil
- 2 tbsp lemon juice
- 1 tbsp apple cider vinegar
- 1 tsp Dijon mustard
- 1 tsp maple syrup optional
- 1 clove garlic minced
- Salt and pepper to taste
- 2 tbsp fresh herbs chopped
In a small bowl, whisk together olive oil, lemon juice, vinegar, mustard, maple syrup, garlic, salt, and pepper. Add chopped herbs.
In a large bowl, combine greens, cucumber, bell pepper, apple, avocado, and pumpkin seeds.
Drizzle with dressing and toss gently to combine.
Serve immediately, garnished with extra herbs and pumpkin seeds if desired.
