Garden Salad: A Fresh Summer Recipe

This simple, nutrient-packed salad combines a variety of greens, herbs, and vegetables for a deliciously fresh and crisp bite.

Equipment

  • Large salad bowl
  • Cutting board and knife
  • Small bowl or jar (for dressing)
  • Whisk or fork
  • Salad tongs

Ingredients
  

  • 4 cups mixed greens baby spinach, arugula, kale
  • 1 cucumber thinly sliced
  • 1 green bell pepper diced
  • 1 green apple thinly sliced
  • 1 avocado diced
  • 1/4 cup pumpkin seeds
  • 1/4 cup fresh herbs basil, parsley, or cilantro
  • For the Lemon Herb Dressing
  • 1/4 cup olive oil
  • 2 tbsp lemon juice
  • 1 tbsp apple cider vinegar
  • 1 tsp Dijon mustard
  • 1 tsp maple syrup optional
  • 1 clove garlic minced
  • Salt and pepper to taste
  • 2 tbsp fresh herbs chopped

Instructions
 

  • In a small bowl, whisk together olive oil, lemon juice, vinegar, mustard, maple syrup, garlic, salt, and pepper. Add chopped herbs.
  • In a large bowl, combine greens, cucumber, bell pepper, apple, avocado, and pumpkin seeds.
  • Drizzle with dressing and toss gently to combine.
  • Serve immediately, garnished with extra herbs and pumpkin seeds if desired.
