French Chicken Casserole à la Normande is a rustic, comforting dish inspired by the flavors of Normandy, a region famous for its apples, cream, and cider.

Ingredients
  

  • 6 bone-in skin-on chicken thighs
  • 2 apples peeled and sliced
  • 2 cups sliced mushrooms
  • 1 onion diced
  • 1 cup apple cider hard or regular
  • 1/2 cup heavy cream
  • 2 tablespoons butter
  • 1 teaspoon fresh thyme leaves
  • Salt and pepper to taste
  • Pinch of nutmeg
  • Fresh parsley for garnish

Equipment

  • Large oven-safe skillet or casserole dish
  • Cutting board and knife
  • Wooden spoon or spatula
  • Mixing bowl

Method
 

  1. Preheat oven to 375°F (190°C).
  2. Season chicken with salt and pepper. Sear in butter until golden brown, then set aside.
  3. Sauté onion, mushrooms, and apples in the same skillet until softened.
  4. Deglaze the skillet with apple cider and simmer for 2 minutes. Stir in cream and nutmeg.
  5. Nestle chicken into the skillet, spoon sauce over the top, and sprinkle with thyme.
  6. Bake uncovered for 30-35 minutes until chicken is fully cooked.

Notes
