This Easiest Air Fryer Tomato Soup is the perfect blend of simplicity and flavor, making it a quick and satisfying meal. Using the air fryer to roast the tomatoes brings out their natural sweetness, which gives the soup a deep, rich flavor.

Ingredients
  

  • 6-8 ripe tomatoes halved and cored
  • 1 tablespoon olive oil for roasting
  • 3-4 garlic cloves peeled
  • 1 small onion diced
  • 2 cups vegetable or chicken broth
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1/2 cup heavy cream or coconut milk optional
  • Salt and pepper to taste
  • Fresh basil for garnish optional

  • Large saucepan or pot
  • Knife
  • Cutting board
  • Spoon
  • Blender or immersion blender

Method
 

  1. Preheat the air fryer to 400°F (200°C).
  2. Drizzle halved tomatoes with olive oil, salt, pepper, and garlic cloves. Air fry at 400°F (200°C) for 15-20 minutes.
  3. Sauté diced onion in olive oil over medium heat in a large pot until soft.
  4. Add roasted tomatoes, garlic, and broth to the pot. Simmer for 10 minutes.
  5. Blend the soup until smooth, then stir in cream or coconut milk if desired.
  6. Taste and adjust seasoning, then simmer for another 5 minutes.

Notes

Serve hot, garnished with basil or croutons.
