This Easiest Air Fryer Tomato Soup is the perfect blend of simplicity and flavor, making it a quick and satisfying meal. Using the air fryer to roast the tomatoes brings out their natural sweetness, which gives the soup a deep, rich flavor.

Equipment

  • Large saucepan or pot
  • Knife
  • Cutting board
  • Spoon
  • Blender or immersion blender

Ingredients
  

  • 6-8 ripe tomatoes halved and cored
  • 1 tablespoon olive oil for roasting
  • 3-4 garlic cloves peeled
  • 1 small onion diced
  • 2 cups vegetable or chicken broth
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1/2 cup heavy cream or coconut milk optional
  • Salt and pepper to taste
  • Fresh basil for garnish optional

Instructions
 

  • Preheat the air fryer to 400°F (200°C).
  • Drizzle halved tomatoes with olive oil, salt, pepper, and garlic cloves. Air fry at 400°F (200°C) for 15-20 minutes.
  • Sauté diced onion in olive oil over medium heat in a large pot until soft.
  • Add roasted tomatoes, garlic, and broth to the pot. Simmer for 10 minutes.
  • Blend the soup until smooth, then stir in cream or coconut milk if desired.
  • Taste and adjust seasoning, then simmer for another 5 minutes.

Notes

Serve hot, garnished with basil or croutons.
