- Preheat the air fryer to 400°F (200°C).
- Drizzle halved tomatoes with olive oil, salt, pepper, and garlic cloves. Air fry at 400°F (200°C) for 15-20 minutes.
- Sauté diced onion in olive oil over medium heat in a large pot until soft.
- Add roasted tomatoes, garlic, and broth to the pot. Simmer for 10 minutes.
- Blend the soup until smooth, then stir in cream or coconut milk if desired.
- Taste and adjust seasoning, then simmer for another 5 minutes.

Serve hot, garnished with basil or croutons.
