Chicken Casserole

Ingredients
  

  • 3-4 boneless skinless chicken breasts, cooked and shredded
  • 2 cups mixed vegetables carrots, celery, peas, onions
  • 1 can 10.5 ounces cream of chicken soup
  • 1/2 cup sour cream
  • 1/4 cup milk
  • 1 cup shredded cheddar cheese
  • 1 cup breadcrumbs or crushed crackers
  • 2 tablespoons melted butter
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

  • Large skillet

Method
 

  1. Preheat oven to 375°F (190°C) and grease a 9x13-inch baking dish.
  2. Season chicken and sear in a skillet until lightly golden. Cool and shred.
  3. In a bowl, whisk together cream of chicken soup, sour cream, milk, and cheddar cheese.
  4. Layer shredded chicken and mixed vegetables in the baking dish. Pour sauce over and stir gently.
  5. Combine breadcrumbs or crackers with melted butter and sprinkle on top.
  6. Bake for 25-30 minutes until bubbly and golden brown. Let cool for 5 minutes before serving.
