Chicken and Spinach Casserole with Cream Cheese is a delicious, creamy, and satisfying one-dish meal that’s perfect for busy weeknights or casual family gatherings.

Ingredients
  

  • 4 boneless skinless chicken breasts
  • 4 cups fresh spinach
  • 8 ounces cream cheese softened
  • 1/2 cup sour cream
  • 2 garlic cloves minced
  • 1 1/2 cups shredded mozzarella cheese
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 1/2 teaspoon onion powder
  • 1 tablespoon olive oil

Equipment

  • 9x13-inch baking dish
  • Large skillet
  • Medium mixing bowl
  • Whisk
  • Cutting board and knife

Method
 

  1. Preheat oven to 375°F (190°C) and grease a 9x13-inch baking dish.
  2. Season chicken with salt, pepper, paprika, and onion powder. Sear in a skillet for 2-3 minutes per side.
  3. In a bowl, mix cream cheese, sour cream, garlic, and a pinch of salt until smooth.
  4. Layer spinach in the baking dish, top with chicken, and spread the cream cheese mixture over the top.
  5. Sprinkle mozzarella cheese over the casserole.
  6. Bake for 25-30 minutes until the chicken is cooked and the cheese is bubbly.
