medium delicata squash
halved, seeded, and sliced

kale or mixed greens

shaved Parmesan

pine nuts or pumpkin seeds

For the Dressing

tbsp
lemon juice
1
tbsp
Dijon mustard
2
cloves
garlic
minced

tbsp
olive oil

tbsp
nutritional yeast
or Parmesan
Salt and pepper
to taste
Instructions
Preheat oven to 425°F (220°C). Roast delicata squash slices with olive oil, salt, and pepper for 20-25 minutes.
Prepare the Caesar dressing by blending lemon juice, Dijon mustard, garlic, olive oil, nutritional yeast, salt, and pepper.
Massage kale with olive oil and salt if using.
Toss the roasted squash, greens, dressing, Parmesan, and toasted nuts together.
Serve immediately for a fresh, flavorful salad.
