Autumn Caesar Salad with Delicata Squash Croutons Recipe

This recipe combines the comfort of roasted squash with the bold flavors of a classic Caesar salad.

Ingredients
  

  • 1 medium delicata squash halved, seeded, and sliced
  • 1 tbsp olive oil
  • Salt and pepper to taste
  • 4 cups kale or mixed greens
  • 1/4 cup shaved Parmesan optional
  • 2 tbsp pine nuts or pumpkin seeds toasted
  • For the Dressing
  • 2 tbsp lemon juice
  • 1 tbsp Dijon mustard
  • 2 cloves garlic minced
  • 3 tbsp olive oil
  • 1 tbsp nutritional yeast or Parmesan
  • Salt and pepper to taste

Equipment

  • Baking sheet
  • Parchment paper
  • Large salad bowl
  • Cutting board and knife
  • Whisk or small blender (for dressing)
  • Tongs

Method
 

  1. Preheat oven to 425°F (220°C). Roast delicata squash slices with olive oil, salt, and pepper for 20-25 minutes.
  2. Prepare the Caesar dressing by blending lemon juice, Dijon mustard, garlic, olive oil, nutritional yeast, salt, and pepper.
  3. Massage kale with olive oil and salt if using.
  4. Toss the roasted squash, greens, dressing, Parmesan, and toasted nuts together.
  5. Serve immediately for a fresh, flavorful salad.
