Autumn Caesar Salad with Delicata Squash Croutons Recipe

This recipe combines the comfort of roasted squash with the bold flavors of a classic Caesar salad.

Equipment

  • Baking sheet
  • Parchment paper
  • Large salad bowl
  • Cutting board and knife
  • Whisk or small blender (for dressing)
  • Tongs

Ingredients
  

  • 1 medium delicata squash halved, seeded, and sliced
  • 1 tbsp olive oil
  • Salt and pepper to taste
  • 4 cups kale or mixed greens
  • 1/4 cup shaved Parmesan optional
  • 2 tbsp pine nuts or pumpkin seeds toasted
  • For the Dressing
  • 2 tbsp lemon juice
  • 1 tbsp Dijon mustard
  • 2 cloves garlic minced
  • 3 tbsp olive oil
  • 1 tbsp nutritional yeast or Parmesan
  • Salt and pepper to taste

Instructions
 

  • Preheat oven to 425°F (220°C). Roast delicata squash slices with olive oil, salt, and pepper for 20-25 minutes.
  • Prepare the Caesar dressing by blending lemon juice, Dijon mustard, garlic, olive oil, nutritional yeast, salt, and pepper.
  • Massage kale with olive oil and salt if using.
  • Toss the roasted squash, greens, dressing, Parmesan, and toasted nuts together.
  • Serve immediately for a fresh, flavorful salad.
